I love simple, versatile products and ingredients.
2 of the most simple and versatile foods that love are hummus and tortillas. Those 2 ingredients have a massive variety of uses and combos, so here's a couple of my favorites.
For a super quick lunch:
—Heat up your whole grain tortilla of choice (I like the Food for Life Brown Rice & Sprouted Grain tortillas)
—Spread on some hummus and avocado too if you like
—Add your vegetables of choice like lettuce, spinach, carrots, cucumber, tomato, sprouts, etc.
—Top with garlic tahini dressing, or spike & nutritional yeast.
You can also use bread and turn this into a sandwich!
I typically make my own, but there is 1 brand of hummus that, if you’re local to Portland, you’ve got to try. It far outshines my own hummus in depth of flavor & texture.
Darby, owner of Round House Foods, makes the most unique and delicious flavors of hummus I’ve found anywhere. It’s creamy, flavorful, there’s 6+ flavors to choose from, and it’s all vegan and gluten-free.
The Balsamic pistachio is a well known favorite at the Downtown Portland Saturday Market, and it makes for an excellent spread on a wrap or sandwich.
The Sriracha Lime and Garlic Overkill are my personal favorites, spread on a sandwich, burger, breakfast burrito, or eat with chips and most likely eat the whole container in 1 sitting because it’s so dang yummy.
