Sofrito is traditionally used in Mediterranean, Latin American, Spanish and Portuguese cooking. It's a blend of aromatics like garlic, onion, and cilantro that adds an amazing flavor and can be used in a huge variety of ways.
I always have some in the freezer to use for quick flavoring. I can also be eaten fresh like salsa if you add a little salt and lime!
As you'll see in the photos, it looks different almost every time I make it because I use what I have on hand or what's available to me. Take away, you can't really mess it up, each variation of ingredient will add a unique difference, so experiment.
Recipe:
1 Onion
1 Green bell pepper
1 Red bell pepper / Or mini sweet peppers
1 Pint cherry tomatoes / Or 2-3 romas
1 Large bunch cilantro / 2 bunches if small
4 Cloves garlic
Jalapeño / Optional
Salt / Optional
Directions
Blend all ingredients in a food processor. Put in an ice cube tray, or bag if the ice tray is unavailable, to freeze and save for later.
A blender works too if you don't have a food processor, but changes the flavor slightly because of how fine it blends the ingredients.
